Mediterranean Turkey and Rice Skillet
Ingredients: 1 tablespoon olive oil
1 pound ground turkey
1 small onion, chopped
2 teaspoons minced garlic
1 teaspoon salt
1⁄2 teaspoon ground black pepper
1⁄2 teaspoon dried oregano
1⁄2 cup Sun-Dried Tomatoes, drained and roughly chopped
1 cup long grain white rice
2 cups chicken broth
5 ounces baby spinach
1 lemon, zested and juiced
1⁄2 cup feta cheese crumbles
Preparation: In large skillet over medium-high heat, heat oil. Cook ground turkey, onion, garlic, salt, pepper and oregano until meat is browned and onion is translucent.
Mix in sun-dried tomatoes, rice and chicken broth. Bring to boil. Cover and reduce heat to low. Cook 15 minutes, until rice is tender.
Stir in spinach, lemon juice and zest. Continue cooking until spinach is wilted. Serve topped with feta cheese.
