Greek Nachos
Ingredients: 1 Tbsp olive oil
1 lb ground lamb or beef
2 cloves garlic, minced
½ tsp dried oregano
¼ tsp garlic powder
salt and pepper to taste
12 oz pita chips
shredded provolone or mozzarella
crumbled feta
roma tomato, diced
red onion, sliced
Kalamata olives, chopped

chopped fresh mint or parsley
Preparation: Preheat the oven to 400° F. Lightly grease a baking sheet with cooking spray.
In a large nonstick skillet, heat one tablespoon of olive oil over medium heat. Add the lamb and minced garlic. Cook until the meat has browned, about 3-5 minutes, seasoning as it cooks with the garlic powder, dried oregano, and salt & pepper to taste. Remove from the heat and drain the extra fat.
Spread out the pita chips in a single layer onto the prepared baking sheet. Top with the ground lamb, making sure it is evenly spread out. Sprinkle with the shredded cheese and then the feta. Place into the oven and bake until heated through and the cheeses have melted, about 5-7 minutes.
Top with the diced tomatoes, sliced red onion, and Kalamata olives. Evenly dollop the Tzatziki sauce in various locations. Garnish with fresh herbs. Serve immediately.
