Pan Con Tomate
Ingredients: 2 ripe tomatoes
1 chili arbol
1 baguette, sliced on the bias
Extra virgin olive oil
2 cloves garlic, halved
Sea salt, large flake
Preparation: Grate tomatoes on a large hole box grater. Drain juice, add to small skillet with chili arbol. Reduce and then stir back into tomatoes.
Brush sliced baguette with olive oil, grill and immediately rub with garlic clove. Spoon tomato on baguettes, sprinkle with salt and serve.
