Indian Basmati Rice     

Ingredients:
1 cup extra long aged basmati rice
2 tablespoons vegetable oil
1 cinnamon stick
5-10 black peppercorns
2 green cardamom pods
3-5 whole cloves
1 star anise
1 Tbsp kosher salt
1 Tbsp white vinegar
8 cups water

Preparation:
Place the rice in a colander or sieve. Rinse under cold running water for 2-3 minutes, until water runs clear. Place the rice in a bowl and cover with cold water. Soak 20-30 minutes.

Meanwhile, heat the oil in a large pot over medium heat. Add spices, cook and stir for about a minute. Add 8 cups of water, bring to a boil. Lower the heat and add salt and vinegar. Drain rice and add to boiling water. Cook 5-9 minutes until slightly underdone. Drain the rice and remove spices.

Remove all water from pan. Place the pan over medium heat and drizzle with oil. Add drained rice to pot, cover with a tight-fitting lid and lower the heat to medium low. When the rice starts to sizzle lower heat to the lowest setting. Continue to steam the rice for 6 minutes. Turn off heat and allow rice to sit for 5 minutes before serving.
