Pork Enchiladas     

Ingredients:
pork roast
large can enchilada sauce
flour or corn tortillas
shredded cheese

OPTIONAL FILLING:
cheese
rice
beans
onion

regular can enchilada sauce

TOPPING:
lettuce, chopped
tomatoes, chopped

Preparation:
Place pork roast and enchilada sauce in slow cooker 7 hours on low. Shred pork in sauce from crockpot.

Preheat oven to 350 degrees. Fill tortillas with meat and any desired filling, roll, and place in casserole dish. Cover with additional enchilada sauce and cheese. Bake until melted and warmed through, about 25-30 minutes.

Top with lettuce and tomatoes.
