Bacon, Egg & Hashbrown Casserole     

Ingredients:
4 slices of crustless bread, cut into quarters
6 eggs
1 1/2 c milk
1/2 pound cooked bacon, chopped
1 cup grated cheddar cheese, divided
1/2 cup chopped mushrooms
1/2 cup frozen hash browns, thawed

Preparation:
Preheat oven to 350°F.

Place slices of bread in 9-inch cast iron skillet, overlapping slightly. (Or use 9-inch pan prepared with cooking spray.)

Whisk together eggs, milk, bacon, and 1/2 cup cheese in a large bowl. Add mushrooms. Pour the mixture over the slices of bread. Sprinkle the potatoes and the remaining cheese over the egg mixture.

Bake in preheated oven until lightly browned and a knife inserted in the center comes out clean, about 35 minutes.
