Zucchini Wedges
Ingredients: 2 medium zucchini
1 Tbsp salt
1/2 cup all purpose flour
2 eggs, lightly beaten
1/2 cup Panko bread crumbs
1/2 cup freshly grated Parmesan cheese
1/2 tsp salt
1/8 tsp red pepper flakes
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp Italian seasoning
Preparation: Trim off both ends of each zucchini, then cut each one in half lengthwise, then in half lengthwise again to form thick wedges. Cut each wedge into 3- to 4-inch-long segments.
Place the zucchini wedges in a colander over a bowl and sprinkle with the tablespoon of salt. Let the zucchini drain for 1 hour or longer; rinse and pat dry.
Preheat the oven to 425F. Line a baking sheet with foil and spray with cooking spray.
Combine bread crumbs, Parmesan cheese, salt, pepper, garlic powder, onion powder and Italian seasoning in a small bowl.
Coat the zucchini with flour. Dip the zucchini into the beaten egg and shake off excess. Dredge zucchini in the bread crumb mixture and place on the prepared baking sheet. Repeat for all zucchini wedges. Spray the top of the zucchini with cooking spray.
Bake zucchini for 22 to 25 minutes, or until golden brown and crisp. Turn over halfway through.
