Potato Rolls     

Ingredients:
100 g potatoes (1 medium)
2 tbsp reserved cooking water from potatoes
15 g dry yeast
50 g sugar
450 g white flour
1 tsp salt
50 g butter, softened
150 ml warmed milk
150 ml warm water
Milk for glazing
grated cheddar cheese

Preparation:
Cook the potatoes in salted water and drain, reserving 2 tablespoons of the cooking liquid. Mash the potatoes very well, then cover and keep warm. (Or use leftover mashed potatoes.)

Add flour to a large mixing bowl with salt and cut in the butter. Mix in sugar, yeast and mashed potatoes. Combine milk, water, and potato liquid, add to flour mixture. Knead very well until it springs back when pressed.

Roll the dough into a long sausage shape and cut into 10-12 pieces. Roll the pieces into dough balls and place in a buttered, floured dutch oven. Cover and leave in a warm place for about an hour, until the dough balls have doubled in size.

Once risen, brush with a little milk, sprinkle with the cheese and bake at 425°F for 15–20 minutes.
