Cortez Calabacitas     

Ingredients:
1 Tbsp butter
1 Tbsp olive oil
1 cup finely chopped onion
1 tsp. minced garlic
2 cups cubed yellow summer squash
2 cups cubed zucchini
2 cups cubed calabacita (Mexican squash)
1/2 cup thinly sliced green onions
1 cup corn
1/2 cup roasted, chopped green chile
salt, to taste
1/2 cup diced ripe tomato
1/3 cup coarsely chopped cilantro

Preparation:
Heat butter and olive oil in a large skillet over medium high. Sauté onion for 2 minutes, add garlic and continue cooking for 2 minutes, stirring frequently. Add squash and cook 4 minutes. Add green onions, corn, and chile, cook an additional 2 minutes. Season with salt and add tomato and cilantro. Heat through an additional 2 minutes and serve.
